At Red Cherry Coffee, sourcing begins at the origin. We work directly with local farmers in Aceh, building relationships that allow us to access coffee at its earliest stage, from freshly harvested cherries to green beans ready for processing.
Our approach prioritizes traceability, consistency, and quality control, starting from the farm level.
Our Farm in Gayo Highlands
We operate a coffee plantation with our local farmer partner Bengi Family located in Arul Latong, Bies, Central Aceh Regency, Aceh, one of the key producing areas within the Gayo Highlands.
This farm allows us to:
- Monitor cultivation practices directly
- Maintain consistent harvesting standards
- Understand seasonal variations and crop quality
However, our production is not limited to our own farm.
Expanding Through Local Partnerships
To ensure stable supply and broader selection, we partner with:
- Individual smallholder farmers
- Local coffee communities and cooperatives
These partnerships allow us to source a wider range of coffee lots across different micro-regions within Aceh and beyond.
By working closely with local networks, we are able to:
- Access multiple processing methods
- Scale volume based on demand
- Maintain flexibility in quality selection
Processing with Local Expertise
Processing is handled through trusted local cooperatives and facilities, where traditional and modern methods are applied, including:
- Giling Basah (Wet Hulled)
- Washed
- Natural
- Honey
- Experimental processes (upon request)
This collaboration ensures that each lot is processed according to both regional expertise and market requirements.
Quality Control at Every Stage
From sourcing to final preparation, we apply consistent quality checks:
- Selection of ripe cherries
- Sorting and grading
- Moisture control (typically 11–13%)
- Defect evaluation
- Cupping and profile assessment
This allows us to deliver coffee that meets the expectations of roasters, importers, and professional buyers.
