Aceh Gayo green coffee beans are among the most recognized Indonesian specialty coffees in the global market. Grown in the Gayo Highlands of Aceh at elevations between 1200 and 1700 meters above sea level, this origin develops a rich and balanced cup profile shaped by volcanic soil and a cool mountain climate.
The result is a classic Sumatra coffee character known for chocolate sweetness, nutty aroma, and a full body. In the cup, Gayo coffee commonly shows notes of dark chocolate, brown sugar, and mild spice, supported by medium acidity and a medium-to-full body, making it suitable for both espresso and filter brewing.
A distinctive characteristic of many Indonesian coffees is the wet-hulled processing method, locally known as Giling Basah. In this process, coffee beans are hulled while still containing around 30–35% moisture, before being fully dried to about 11–13% moisture content. This method contributes to the heavier body and deeper flavor profile commonly associated with Sumatra coffees.
Today, in addition to the traditional wet-hulled process, producers in the Gayo region also apply washed, natural, honey, and experimental fermentation methods, offering different flavor expressions while maintaining the origin’s signature Sumatra character.
