What differentiates Kopi Luwak from regular gayo coffee is its natural enzymatic fermentation inside the digestive system of the Asian palm civet (luwak). During this process, the coffee cherries are selectively eaten, and the beans undergo protein breakdown and fermentation, resulting in a significantly smoother and less acidic cup profile.
In contrast to regular gayo coffee, which is known for medium acidity and bold structure, Kopi Luwak offers a low-acidity, full-bodied cup with enhanced smoothness and reduced bitterness. Flavor characteristics commonly include dark chocolate, caramel, earthy tones, and a mild herbal finish, with a clean and long aftertaste.
Kopi Luwak from Gayo is wild-sourced, after collection, the beans are carefully cleaned, hygienically processed, and hulled. This post-processing stage ensures export-grade consistency while preserving the unique characteristics developed during the Luwak fermentation.
